Born in Tel Aviv, Israel, Einat Admony traveled around Europe and worked at numerous well-known kitchens in New York before opening her own restaurant, Taem, in the West Village in 2007. Specializing in falafel, it soon became a neighborhood staple. Admony's second restaurant, Nolita's Balaboosta, featured a fuller menu and won acclaim from The New York Times, and The New Yorker. In 2014 she opened her third restaurant, Bar Bolonat, serving up her personal take on modern Israeli cuisine. Updated 2014
